    From the back label of one of your wine pics – ‘wines, ideal for laying down’. Huh. Laying down a wine allows the tannins and acidity to evolve and soften so that the wine is perfect. Winemakers produce wines made for aging in a specific way, they know how long the wine is going to last based on experience and knowledge. How long a wine should be laid down is usually indicated on the label(I didn’t see). Winemakers can choose whether or not their wines are for laying down by selecting the specific grape variety, harvesting the grapes at the appropriate time, pressing the grapes and blending them with other types of grape varieties. Another great post.

    How do Laurie and Pierre stay so slender eating desserts as lush looking as their ice cake? Of many of the things I’m envious of your meals are at the top of the list.

      They move constantly!!! Walking, steps, golf, you name it.

        Also, they eat nothing in between meals and eat very, very healthy….fish, fresh fruit, etc. Most of our desserts were fruit…cantaloupe, custard apples, peaches. This was the only one that had processed sugar. But the cheese and bread they eat is amazing. They eat the big meal

    Aahhhh sounds like a perfect day in Paris (preceded by perfect one with Bernie’s cousins).

    Beautiful meal, from start to finish. Did you/they really drink all of those wines?? Wow! That is an amazing collection. See you in a couple of days!

      In regard to the wine, no, they didn’t drink all of these wines. Pierre just gave him a tour of his cave and some of the best bottles. Can you join us for dinner Saturday night at Chez Janou with Jamie and Stephen and maybe Richard Nahem? That’s the 15th.
